I first discovered these deliciously decadent cookie bites for Mardi Gras from Blaine Tatje (a preferred agent in NOLA)! Made them and oh my goodness. These make a dessert for all seasons … I made Mardi Gras colors, pink for a new baby, red-white-blue for 4th of July, purple and gold for LSU games! I make them about 2-bite size since they are so rich. These will be a hit for any occasion!
1 14 oz pkg Golden Oreos
1 8 oz pkg cream cheese, softened
2 T almond extract (or Bourbon)
12 oz white chocolate baking chips
1 T vegetable oil
Sanding sugars, your choice of colors
In a food processor crush Oreos to fine crumbs. Pour into large bowl. Add softened cream cheese and almond extract. Stir until well combined (clean hands work well!) Line a baking sheet with parchment paper. Using a small cookie scoop or spoon, roll mixture into small balls. Place on baking sheet and freeze until slightly hardened, about 30 minutes. In a medium microwave safe bowl combine chocolate chips and oil. Melt at 30 second intervals, stirring in between. Use a fork to dip frozen balls in melted chocolate and place back on baking sheet. (Depending on how long it takes to dip the balls you may have to soften the icing again in microwave.) Quickly sprinkle tops with sanding sugar while icing is soft. Chill in fridge for 20 minutes until hardened. Makes about 3 dozen depending on size. Enjoy and celebrate!
